Tofu Supreme

What you need: 

1 tablespoon olive oil
half package of firm tofu
1/4 cup chopped onions
1/2 cup chopped green pepper or red pepper
1 cup soy cheese (if permitted mozarella)
1 cup cooked brown rice
1 teaspoon soy sauce(or Braggs Aminos)

What you do: 

Add to fry pan the olive oil, add chopped onions and the peppers. Saute for 3-5 minutes. Watch carefully so you do not overcook. Add tofu to mixture and saute together for a few more minutes. Turn off heat and remove pan from stove.
In another pan melt the soy cheese on low to medium high heat.
Combine the pepper/onion/tofu mixture with the cooked brown rice, and set on serving plate. Pour the melted soy cheese on top. Add soy sauce(or braggs aminos) for added flavor.
