Tofu Scramble (Spinach, Avocado, Cheese)

What you need: 

4 ounces extra firm tofu
1/4 cup fresh spinach
1 teaspoon olive oil
2-3 dashes ground turmeric
1/2 ripe avocado, chopped
1/2 tomato, chopped, optional
small handful vegan cheese, shredded
dash black pepper

What you do: 

1. Crumble tofu and sauté with spinach and olive oil, until spinach is limp. Add turmeric until nice bright yellow color (careful not to add too much).
2. Continue cooking over medium heat 1-2 minutes.
3. Stir in avocado and tomato (if desired), and top with grated vegan cheese, and pepper to taste.

SO HOW'D IT GO?

Fantastic recipe! I used mixed collard greens instead of spinach added in some chopped black olives and topped it with sriracha. The avocado gives a great flavor as do the tomato's. It's so fresh tasting. This is definitely being added to my list.

So simple and just like eggs! I didn't have any avocado but it I did have hot sauce...amazingly yummy.

I just made this for lunch, and it was great! I left off the soy cheese and added some green onions. Yum!

yum. i added some onions and adobo spice and ate it with ketchup, just how i like my eggs and it was great.

Confirmed.... making it now... mmmm :)  :D

This was surprisingly bland to me....I didn't have any cheese, but I added some parm....we had to add a ton of hot sauce - I tried the ketchup thing, but I preferred the hot sauce.....its so weird because I love all of the ingredients seperately....it just didn't work for me.

i changed it AGAIN! no avocado.... i added corn  and wayyy more spinach, seasonings and some mushrooms, served over toast. will post picture. i love breakfast.

i love doing this as directed, but this morning i jazzed it up and left out the cheese but added:
-a cut up smart hot dog
-2 tbl.spns. sunflower seeds
-1 small potato
-a greek seasoning....?
-mustard seed
-1tsp. flax oil

random assortment of ingrediants but.... sooooooo good.

This recipe was so simple yet it had a lot of flavor. I never would have thought to add avacado but it suprised me and turned out excellent. I also ate it with ketchup and added fresh tomatoes like you suggested. Got to get those extra servings of fruits and veggies!  ;)
