1 package firm tofu, crumbled
1 small onion, chopped
1 small green bell pepper, chopped
1 medium white potato, diced
3 links/patties of your favorite vegan breakfast style sausage, cut up in chunks
a few dashes of paprika
fresh ground black pepper
a few teaspoons of vegetable oil
Heat the oil in a large skillet. Add the potatoes and cook for several minutes allowing the potatoes to brown, stirring occasionally. Add onions and cook until translucent. Add bell peppers and saute until all vegetables are fully cooked. I like to let everything brown a bit since it adds a nice flavor. Add vegan sausage and season with paprika, pepper and black salt to taste. Sometimes I also add a bit of nutritional yeast. Cook for a few more minutes to allow the flavors to mingle and enjoy!
Black salt can be found in Indian grocery stores and adds a nice eggy flavor so don't leave this out.
I either eat this as is with some toast on the side or I sometimes use it as a sandwich filling with English muffins and a bit of ketchup.
