Tofu Scams

What you need: 

1 lb firm tofu, crumbled
1 large tomato, diced
1-2 garlic cloves, chopped (optional)
Sauce:
1 tablespoon jam spread (I use Trader Joe's apricot)
1 1/2 tablespoons balsamic vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt
1 teaspoon pepper
1 teaspoon all purpose seasoning

What you do: 

Mix the sauce ingredients with a fork until well blended.
Mix in with tofu and the diced tomatoes.
Let it sit for 10 minutes or more.
Heat a stir-frying pan with 1 tablespoon oil or non stick pan. Chop in some garlic if you like.
Stir fry the tofu until brown and serve.
