Tofu Salad Sandwich

What you need: 

1 clove garlic
1/2 onion
1 package tofu
1 avocado
1 tablespoons turmeric
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/4 teaspoon paprika
1/4 teaspoon sage
pinch chile pepper
salt to taste
2 tablespoons vegan mayonnaise (Vegenaise)
vegan bread

What you do: 

Drain and mash tofu and add turmeric, garlic powder, Italian seasoning, paprika, sage, chile pepper, salt & pepper mix and set aside.
Mash avocado.
fry garlic & onion in 1 tablespoons oil until soft. Add the tofu mixture, avocado & vegan mayonnaise. Cook until tofu is firm about 25 minutes.
Spread vegan mayo on your bread add tofu salad and eat!

SO HOW'D IT GO?

My husband and I LOVED this.  I made a few modifications and added a little lemon juice and pepper to my avocados when I mashed them.  Also,  I didn't mix the tofu and the avocados until just before I put the mixture on our nicely toasted rolls.  Cooking the avocados just seemed wrong.  Maybe I misread that part.  Oh, and we added some sliced tomatoes on top as well.  Really, really good.  And very filling.  I plan on making these for non-vegan family members. I think next time I might add some chopped up cucumber to the mix for a little fresh crunch.
