Tofu Ricotta

What you need: 

400 grams tofu
2 to 3 spring onions or chives
1 teaspoon vegetable or herbal salt
1 teaspoon dried mixed herbs
quarter to half a cup of cold pressed olive oil
a twist of the pepper grinder

What you do: 

Blend all the ingredients in a food processor.
Serve as a dip with a platter of raw vegetables, or spread on whole-wheat vegan bread, or use as you would cottage cheese.
