Tofu Pepperoni

What you need:

1 block of extra firm tofu (freeze over night and defrost)
4 tablespoons margarine (I use Blue Bonnet Light)
1 tablespoon of paprika
1 tablespoon of garlic powder
red pepper flakes to taste
salt to taste
hot sauce to taste

What you do:

After defrosting tofu, cut in half length wise and then then slice into squares.
Grease a pan and lay them out.
Mix together the spices and add to the melted margarine. Spread on both sides of the tofu.
Pre-Heat oven to 375 degrees and bake till tofu is browned and crispy.
Take out of oven and put it on your favorite pizza or make a calzone and stuff it with pepperoni (that's what I do)
Enjoy. The measurements may be a bit off because I just pour and don't measure.

SO HOW'D IT GO?

I'm cooking this right now.
It is taking FOREVER to dry at all...
I've finally upped the temperature 100 more degrees... and that is seeming to help.  Hopefully I'll be able to eat in the next 20 minutes or so (I've already waiting probably an hour)
