Tofu 'Parmesan'

What you need: 

extra firm tofu, drained and pressed, sliced into 1/2 inch slabs
Italian-style vegan breadcrumbs
canola oil
1/2 cup water
2 tablespoons cornstarch
your favorite marinara sauce

What you do: 

Pour oil into frying pan, begin to heat on medium-high.
Mix water and cornstarch in a small bowl. Pour breadcrumbs in a wide, shallow bowl.
Take a tofu slice and dip both sides in the cornstarch water mix, then in the breadcrumbs.
Place in the pan, and fry until golden brown, about 2-3 minutes on each side.
Note: Make sure you are using drained and pressed tofu. If you are using tofu straight from the package, the water inside the tofu will spit and sputter and stick to the pan.
Serve with your favorite marinara sauce, garlic bread, and a side salad.

SO HOW'D IT GO?

Just made this, poured the marinara over some low carb pasta, topped it with the tofus, and then covered all in a little daiya mozzerella and popped it in the oven. Added some Braggs and poultry seasoning to the cornstarch mix for some flavor for the tofus. Am waiting 15 mins to eat, but it looks great!

Made this recipe tonight.  It was easy and pretty good, though it was a little... tofu-ey? for my boyfriend's and my tastes.  That might be us, not the recipe.  After the first tofu slab came out still a bit too soft for my taste, I fried the rest of them for longer than the 2-3 minutes on each side, which helped a bit, though I didn't keep track of exactly how long it was.

I also added half a slice of vegan cheese on top of each tofu slab, and microwaved for a minute so they'd be nice and melty.

Since I'm a bit of a newbie to cooking, I'd never "drained and pressed tofu" before.  I found this link helpful on that topic: http://vegetarian.about.com/od/newfoodssubstitutions/ht/presstofu.htm

Anyway, the parmesan aspect of the recipe was great.  But if you don't usually like tofu that isn't very well-cooked, you might not love this.

Excellent recipe! I made it the other night for my vegan girlfriend and myself and we absolutly loved it. Had some trouble finding bread crumbs and ended up with what most people on here use, Italian style chicken shake n bake. Much to my surprise it was vegan but a little more expensive than  just plain old bread crumbs at Kroger. Served with rice and kernal corn, very good addition to your recipe! Thanks.  8-)
