Tofu Gan Pitas

What you need: 

approx. 2 oz. (50 gr) tofu gan (smoked and pressed tofu)
2 large whole wheat pitas
shredded lettuce and/or spinach
tomato wedges
bean sprouts
vegan mayo
sweet chili sauce or other favorite dipper
cucumber chunks

What you do: 

Slice the tofu very thin.
Open the pitas and splodge in some vegan mayo. Stuff with tofu gan and the rest of the saladings.
Dip at each bite into the sauce of choice.
Eat this over a plate...I always fill mine too full of goodies and it drips a bit at each bite!
VARIATIONS: The tofu slices can be sautéed in garlic and olive oil or thrown on a grill for a moment.
You can use a wrap or wholegrain bread instead of pitas. And of course, any other chopped or grated veggies that tickle your fancy.
