Tofu, Chick Pea Curried Sensation!

What you need: 

extra firm tofu
1 can chick peas
smallest can of tomato paste (sorry don't remember measurement)
1/2 cup of plain soy/rice milk
red curry powder
coriander
cinnamon
salt/pepper to taste

What you do: 

Drain and press tofu to get as much water out as possible, or use whatever method works for you to get it dry.
Crumble tofu and add it with chick peas to a medium sized sauce pan.
Add tomato paste and soy/rice milk.
On medium low heat, stir in spices to taste, and let cook until heated evenly; stirring occasionally.
Add more soy milk if you want it milkier, can also use Coconut Milk.
This makes a perfect side to almost any main course!
Feel free to experiment with amounts, I change it almost every time.

What exactly is this meant to be?

Before putting the chick peas and the tofu I fried a clove of garlic. I used yellow curry instead of the red and parsley instead of coriander. This was pretty average for me.

Well, I don't want to rate the recipe b/c I basically made something totally different..but it was fabulous! I forgot that I ran out of chick peas, so I decided to use great northern beans. I fried about a 1/4 block of cubed tofu for a couple minutes, added some mushrooms, fresh jalapeno, the beans, not a whole can of tomato paste, lime zest and juice, a little soy milk, organic green peas, and green onion. I used s, p, coriander, curry thai red, a dash of cinnamon, and basil. Yum! I ate the whole thing..
