Tofu and Cauliflower with Salsa Verde

What you need: 

cauliflower bunch cut up into nice pieces
firm tofu cut up into 1/2 inch to 1 inch cubes (to your liking)
tomatillos, about 6
2 garlic cloves
2 serrano or jalepeno peppers
1 small onion
1 cup cilantro
2 tablespoon of cumin
2 cups water
rice-cooked to serve with dish(optional)
tortillas (optional)
blender or food processor
1 small bay leaf
salt (optional)
pepper (optional)
2 tablespoons of extra virgin olive oil

What you do: 

Peel husks off of tomatillos and wash. Seed serrano or jalepenos, cutting of stems. In a blender, add tomatillos, peppers, garlic, onion, cilantro and water. Blend until liquified (can be a little chunky if prefered). Take cauliflower and tofu, saute with the olive oil and salt and pepper. In a sauce pan, take blended ingredients and start heating to cook, adding bay leaf and cumin. After cauliflower and tofu are cooked to your liking, add to the tomatillo mix that is cooking with the olive oil as well. Does not need too much cooking time. Heat all ingredients together for approximatley 8 minutes and remove from heat. Serve over rice or alone eating with heated tortillas. I like to cut the tortillas in strips and fry them till they are a little brown and crispy to eat with the salsa verde. Enjoy!
