Time-Warp Lemon Squares

What you need: 

Crust:
1 cup all-purpose flour
5 tablespoons margarine
1/4 cup granulated sugar

Filling:
3 egg replacers (I use Ener-G Egg Replacer)
3/4 cup granulated sugar
3 tablespoons all-purpose flour
1 teaspoon real vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt
2-3 lemons, zested and juiced

powdered sugar, optional

What you do: 

1. Preheat oven to 350 degrees F. For crust, in a bowl, combine crust ingredients and press into 8 X 8" pan. Bake for 15 minutes.
2. For filling, while crust is baking, beat the egg replacers in a bowl until foamy. Add the remainder of the filling ingredients and mix together. Pour over the crust, and bake 20 minutes more, or until set. Cool.
3. For topping, sift powdered sugar on top, if you'd like, and enjoy the trip down memory lane!
For fancier version, add a layer of vegan cream cheese mixed with a little powdered sugar over the baked crust before you pour in the filling. (You may have to cool the crust a bit before spreading the layer out.)

Yummy!  I followed directions exactly, right down to baking times.  I used 2 perfect Sunkist lemons, but I think it could have used a 3rd - I'll try that next time!  I covered the tops with powdered sugar - so good.  (I'm now tempted to make these with tart/sweet mandarin oranges!)

These really are so very good. I didn't add the cream cheese, used lemon extract instead of lemon zest, and used powdered sugar instead of granulated sugar in the crest. I did everything else as the recipe is written with Ener-G as my egg replacer. These really are so, so good. I have never had these before actually so this was my first time and now this recipe is a keeper for me. Sure would be so nice if I owned a Ponderosa Lemon Tree. I would make these at least once a week!

When I decided to try this, I had no nice lemons, but I had lovely organic oranges, so I made orange squares. There's no nostalgia involved for me - never made a square like this in my life! - but wow, these are awesome!

I used sunflower oil instead of margarine, and the base is lightly crisp and slightly... flaky? The flour in the topping rose up, like some people said, but I think this allowed it to become beautifully golden-brown and photogenic (see my photo!). ;)b

I'm keen to try this recipe using other citrus. If (when) I make it with oranges again, I will add less sugar to compensate for their natural sweetness. It's pushing the limits of my sugar tolerance. ;D

These were sooo tasty! I was pleasantly surprised with how well this came out; the consistency was perfect. I didn't have a zester so I just added more lemon juice (but then had to add a bit more flour). I added the extra layer of cream cheese but I think I'll like it better without it. Not that it wasn't tasty, but I don't think it went with it too well; my sister and her fiance would disagree...but I digress. Thanks for the awesome recipe!!!!

I use powdered sugar in the crust instead, but yeah this is a keeper fer sure.

I tried it with and without adding flour to the lemon mix, and it didn't set up without it.  That actually surprised me a little.  Also make sure you use hot water with the ener-g stuff... it doesn't thicken up as easily without it.  Just throwing some kitchen-tested knowledge your way  ;)

These were excellent - exactly what I was craving. I think next time I will use a bit less zest/juice because they are a little too tart, but otherwise divine! Thanks for posting this.

okay, i have to say these were really really good and super easy to make, BUT i felt like they came out a little too gel like or too glutenous, kinda chewy (the filling, not the crust-which was perfect) is that normal and just what to expect from ener-g egg replacer? or did i over beat my ener-g eggs? just curious... the taste was awesome tho!  :)
