Thick, Flavorful, Hearty, Split Pea Soup!

What you need: 

1 bag (2 cups) split peas, no presoaking necessary
4 cups vegetable broth
4 cups water
1 vegetable bullion cube
2 large potatoes, peeled and finely chopped
2 stalks celery, finely chopped
1 medium carrot, finely chopped
1 medium onion, finely chopped
1 clove garlic, minced
1 leek, finely sliced
2 bay leaves
2 tablespoons parsley
1 tablespoon basil
1 teaspoon rosemary

What you do: 

1. Combine all ingredients in large pot, stir around a bit, cover and gently simmer for about an hour.
2. Use a potato masher to thoroughly mash everything up. There shouldn't really be major chunks of anything floating around. The potatoes and split peas mashed together will make a nice thick puree. (If you don't have a potato masher, use a large fork, egg beater, whatever you have and beat it vigorously for a few minutes.)
3. Cover and gently simmer for about 30 more minutes. Be sure to add water if needed so that the whole thing isn't sputtering loudly like a stew would. It needs to look watery and soupy, not stewy while it's simmering so that it won't burn. Do not boil!!
4. Uncover and simmer until enough water has evaporated to desired thickness (make sure to stir it around to get a better idea because all the gloop will sink to the bottom and make the soup look more watery than it actually is). Remove bay leaves, salt and pepper to taste, enjoy!

SO HOW'D IT GO?

Made this for the first time today. I must say it was really easy. I omitted leeks as I did not have any, but I added a couple extra bouillon cubes for flavor. Over all this was a fantastic soup! Next time I will add more garlic and I will sweat the leeks with the onions and garlic before adding the rest if the ingredients. Thanks for posting!

i didnt have any veggie bouillon so i made my own  veggie stock from  some sraps i had.
My soup base was  weak ..Needs  more flavor. I will have to put in mpre  smoke and salt

I used a box of organic mushroom broth (4 cups)  and about a cup and a half of potato buds as I didn't have any potatoes.  I also added a dash (about a half cap full   ) liquid smoke!  Yummy!!!! :D  Can't wait to have another bowl tonight!!!

This was very good, I did as another reviewer suggested and used turnips rather than potatoes, I also pureed the soup in the food processor, added a minced jalapeno, and used shallots rather than leeks. Served with a little bit of crumbled smoky tempeh on top.

I made this recipe at the vegan cooperative I live at, and people loved it! I multiplied everything by 10 to serve 40 people. Even while making a huge amount, it took a lot less time to cook than the recipe said it would. I didn't have any broth or bullion cube, so I added a ton more spices (italian herbs, garlic, and salt) and it still came out great. I pureed half of the soup in the blender and left the other half a bit chunkier-- creating a nice texture. I also added some carrots and broccoli. I served the soup with skillet cornbread and a quinoa/broccoli salad! Thanks for the recipe!

My boyfriend and I have a Sunday ritual of cooking together... This past Sunday we decided to make this soup.  We both enjoyed it!  ;)b  We added extra garlic, another leek and fake bac'n which gave it a nice smokey flavor.  We also sauteed the veggies before adding the liquid.  The only thing we agreed we would do differently is soak the peas overnight.  They didn't get as soft as we like them.  We served it with a nice crusty french bread to dip in the soup.  Yum!

Just to add, it tasted much more flavorful today and got nice and thick...I even ate some cold. Some foods just taste better overnite and I really enjoyed it today.

I added about 6 cloves of garlic from my garlic presser, 4 carrots, a little cumin and liquid smoke. Omitted the leeks and celery , next time I will add an extra onion for more flavor. My bf loved it, I thought it was a little bland (omitted the basil though). I put in a nice amount of salt and topped with cilantro. I will make again.
