Thai Veg and Mushies in Coconut Milk
oil, as needed
3 fresh red chillies, finely chopped
2 stems fresh lemon grass
1/2 to 1 cup coconut milk
Kaffir lime leaf, optional
1 small zucchini, sliced
1 medium carrot, sliced
1/2 cup green beans
2 small peppers, chopped
1 red pepper, sliced
1 yellow pepper, sliced
1 cup broccoli, chopped into small florets
1 (8 ounce) can Chinese straw mushrooms, drained and left whole
2 tablespoons fresh chopped basil
1 large sprig cilantro, chopped
1. Heat oil, add chillies, lemon grass and cook stirring for about 2 minutes. Add coconut milk and lime leaf and stir until heated through.
2. Add all vegetables, but the mushrooms and fry until just tender. Add mushrooms and basil and fry until heated again (another few minutes).
3. At the end, add the cilantro and mix it through leaving a little for garnish.
This is a very versatile veggie dish that can be served on its own, with rice or as a compliment to other dishes.
