Thai Sweet n Sour Fresh Cucumber

What you need: 

2 medium cucumbers
1 large onion, peeled
1 cup hot water
3 tablespoon sugar
1 tablespoon salt
1 tablespoon red pepper flakes
1 cup white vinegar

What you do: 

Wash cucumbers and slice in half lengthwise, then cut into thin slices; cut the onion into vertical strips. Place the veggies in a large bowl. In a separate container, mix remaining ingredients in order listed, mixing well. Pour this mixture over the veggies, and cover with plastic wrap. Best if allowed to sit for an hour or so before serving--even better if refrigerated overnight and brought to room temperature before serving.

SO HOW'D IT GO?

I made this and it was good, I basically halved the recipe because it's only me and my husband and made it with the tofu lettuce wraps.
I have had this a million times in Thai restaurants and I always find it super yummy and refreshing, it's a great thing to eat after all that spice. I added some cubed carrot to it…My only gripe is its way too vinegary. I added a lot of sugar which seemed to help but next time I will halve the vinegar even more and add it to taste, maybe need less sugar then.
Overall this recipe is great and on the money!
