Thai Lime Tofu and Red Pepper Stir Fry

What you need: 

oil, for frying
1/2 block extra firm tofu
2 cloves garlic
a few pinches brown sugar
2 tablespoon seasoned rice vinegar
1 small onion
1 inch piece ginger
2 tablespoon Thai red curry paste
1/4-1/2 cup soy milk
zest and juice of 1 lime
1/4 cup of nuts (peanuts or cashews would be nice here)
cilantro for garnish

What you do: 

Slice tofu into small strips and marinate in the rice vinegar, brown sugar and 1 tablespoon of curry paste. Next, fry the tofu until crispy. Then add the chopped onion, and minced garlic and ginger. After a few minutes of cooking, add in the red pepper and cook until slightly softened. Then add in the rest of the curry paste, to taste, mixed with the soy milk. Cook until thickened to desired consistency. Add in the lime zest and juice. Remove from heat and add nuts and/or cilantro (optional). Serve over rice.
