Texas Caviar Chip Dip

What you need: 

1 red pepper, chopped
1 yellow pepper, chopped
2 jalapeno peppers, chopped fine
1 bunch green onions, sliced
1 small red onion, chopped fine
1 16 oz. can corn, drained
1 16 oz. can black eyed peas, drained
1 16 oz. can black beans, drained
1 cup sugar
3/4 cup vinegar

What you do: 

Mix sugar & vinegar in small bowl. Set aside. Place the rest of the ingredients in a large bowl and mix. Pour vinegar mix over the rest of the ingredients (it should be soupy). Mix up really well, then cover the bowl and refrigerate overnight, mixing several times. Drain with slotted spoon before serving and serve with tortilla chips.

SO HOW'D IT GO?

Yum. This was great. Left out most of sugar. Loved there was no oil in the dressing.

I can only give this 3 stars due to the alterations I made, but the base recipe is good.  I used maybe a tablespoon of sugar (I'm diabetic and do not eat much sweet food unless it's fruit), added homegrown cherry tomatoes, garlic, green chiles (in addition to the jalapenos), a little oregano and cumin, some lime juice and a bunch cilantro.  Thanks!

this was SO good. i used only a couple of tablespoons of sugar and it was plenty sweet. i also added some lime juice and cilantro from my garden

This dip was a hit at my party!  I didn't have any jalapenos, so I left those out and I only put half the sugar and it was plenty sweet!  Delicious!  And very pretty with all the colors.
