Teriyaki Barbecue Tempeh Veggie Bowl

What you need: 

5 oz. or half a package tempeh, crumbled
1/4 cup barbecue sauce
2 tablespoon teriyaki or soy sauce
1 cup brown rice
1/2 cup assorted steamed veggies

What you do: 

Spray a non stick frying pan with non stick spray, then heat over a medium flame.
Crumble the tempeh into bite size chunks then place in a bowl with barbecue sauce.
Stir until tempeh is covered in the sauce then add to heated skillet. Let cook for 5 minutes, turning frequently to brown all sides. Add teriyaki sauce and cook for 2 more minutes. Remove from heat.
In the meantime boil rice as directed on package and steam veggies in the microwave. You can use any kind, my favorite for this recipe are broccoli, carrots, green beans and peas.
Once rice and veggies are done, layer rice then cover with veggies in a bowl. Pour hot tempeh over both and viola- a quick, filling and cheap meal for someone on the go!

SO HOW'D IT GO?

I cooked fresh broccoli, carrots, and red onion with the tempeh in the sauce and ate it over brown rice. The sauce was a swinging success, but I adjusted the ratio of tempeh to veggies... I prefer a lot of veggies.

This was good, but I made a few changes.  I browned the tempeh, sauteed the veggies (onion, celery, bell pepper), then mixed the barbeque sauce with soy sauce and poured it over the veggies/tempeh.  When it was nearly done, I added some kale and cooked until it was slightly wilted.  I served it over quinoa.  I wish I had more of the sauce, but I ran out of barbeque sauce.  I never would have thought to combine barbeque and teriyaki/soy sauce, but it's good!

Thanks for the recipe! Unfortunately I didnt like it :-( I didnt like the sauce on the tempeh. Mine tasted way too salty - must have been the soy sauce. My sister loved it though! I served mine with brown rice & greean beans, carrots & corn.

I made this tonight and it was delicious!  I agree with animal_g though.... the rice and veggies need some bbq/teriyaki love and I'll make more sauce next time!  I used soy sauce because I didn't have teriyaki sauce.

I wasn't sure about the combo of tempeh with bbq sauce AND teriyaki so I had to investigate further. Turns out I love the combo and could probably eat it like this by itself. I used couscous instead of rice because I was on the go and wanted to speed things along. Next time I will make more teriyaki sauce to drown my veggies and grains with,as they were kind of lonely and bland on the bottom of the bowl while the tempeh on top got all the attention;this time around I had only made enough teriyaki for this recipe(2 tbsp).
An exciting way to prepare tempeh, although I don't have much experience making it any other way.
