Tater Tot Casserole
1 batch of "Nutritional Yeast Con Queso Sauce" except instead of using tomatoes, add a can of condensed vegetable soup (undiluted)
4 oz. vegan burger-style crumbles
1/2 cup favorite frozen vegies (mixed vegies is great, but my kids love just corn)
32 oz. bag vegan frozen tater tots
Make one batch of "Nutritional Yeast Con Queso Sauce", but omit the canned tomatoes and use a can of condensed vegetable soup, without adding water.
Preheat oven to 350 degrees.
Pour sauce into 13X9" baking dish, stir in crumbles and frozen veggies until mixed and everything is covered with sauce. Spread in bottom of pan to make even. Dump bag of tater tots on top of mixture, and even them out a bit.
Bake 30-40 minutes until tater tots are golden brown.
