3 tablespoons olive oil
1 medium onion, diced
1 medium bell pepper, diced
2 cups frozen corn
1 – 12 ounce package vegan beef crumbles
1- 15 ounce can black beans, drained
2 tablespoons taco seasoning
1/2 cup water
3 cups cooked brown rice
12 fajita-sized tortillas
1) Add oil to a large pot and heat over medium heat. Add onions, bell peppers, and corn and cook until softened. Stir in beef crumbles and beans and heat through. Add taco seasoning and water and allow to simmer and thicken. Stir in cooked rice.
2) Fill tortillas with filling and your favorite taco toppings. Enjoy!
Good fillings for these are vegan sour cream, fresh cilantro, vegan cheese, hot sauce, and your favorite vegetables.
