Tapioca Pudding

What you need: 

1/2 cup tapioca pearls (not instant!)
3 cups nondairy milk (I use soy)
1/2 cup sugar
1/2 teaspoon vanilla

What you do: 

1. Soak tapioca pearls in 2 cups water for about 1 hour. Drain.
2. In a medium sized saucepan, combine tapioca, milk, and sugar. Stir the mixture over medium heat for about 20 minutes until thickened to pudding-like consistency.
3. Add vanilla and stir. Allow to cool, then chill and serve cold.

SO HOW'D IT GO?

This was good, it smelled so good I didn't wait for it to fully thicken, so that's my fault, good stuff though.
