Tantalizing Indian Tofu Scramble

What you need: 

1/5 box firm tofu
spinach, chopped
bell pepper, chopped
onion, shopped
carrot, chopped
1 clove of garlic
2 teaspoon of ketchup or tomato paste
2 tablespoons water
salt and crushed red pepper flakes (as desired)
1 + 1/2 teaspoon curry powder

What you do: 

Saute everything except the spinach for about 7 minutes on medium highish (6). Add spinach and then garlic and cook for a minute or until wilted. Add spices, ketchup and water and cook until diminished. Enjoy.

SO HOW'D IT GO?

I really tweaked this recipe, but the curry idea was great (more flavor than tumeric by itself)

Used entire box of tofu, an entire onion which I browned in a splash of oil, added mushrooms as I did not have the other veggies on hand, then crumbled the tofu after the mushrooms were cooked. Added the curry, garlic, hot rooster sauce (instead of the tomato paste) and salt and red pepper flakes. It IS awesome :) I put it in a whole wheat pocket and have had 5 breakfasts now. Adjust seasonings at the end to your liking.
