Tangy Marinated Tofu Strips

What you need:

1 package extra firm tofu
1/3 cup balsamic vinegar
2 tablespoon white vinegar or red wine vinegar
2 tablespoon black bean sauce
cracked black pepper (to taste)

What you do:

It seems as though it is a rather unimaginative side dish, but the end result is very, very tasty- my carnivoire partner gobbles it up! Plus, its a quick protien fix.
First, cut the block of tofu into 4 verticle sections. Then cut each section again in half (basically you want to cut tofu into medium sized strips). Put tofu in a bowl or dish which will allow the marinade to cover the strips.
Add the marinade ingredients making sure it is well blended and saturated into the tofu. Cover and leave soak for the afternoon (2-4 hours). Make sure you let the tofu marinade for a while for it to really soak up the flavor. (Hint: poke strips with fork make tofu more absorbent)
When ready to cook, transfer ingredients (tofu and sauce) to pan and cook at medium heat for 5 minutes or so (occasionally flipping strips)or until most of the marinade evaporates.
This recipe is quite flexible- you can half it easily as well. If you have extra vegan wine (preferably red) you could add a dash of that as well- yum.
