Tangy Ginger Carrot Salad

What you need: 

2 large carrots, washed, peeled, and cut very thin on a mandolin slicer
2 teaspoons cider vinegar
1 teaspoon olive oil
2 teaspoons maple syrup
1/2 teaspoon ginger puree

What you do: 

Combine all ingredients in a bowl.
Stir to mix.
Serve immediately or chill in fridge until serving.
