Tangy Cheeseless Cheese Sauce

What you need:

2 tablespoons vegan margarine (Earth Balance is good)
2 tablespoons unbleached all purpose flour
1 cup unsweetened nondairy milk (I use soy)
1/4 cup nutritional yeast flakes
1-2 tablespoons tahini
1-2 teaspoons lemon juice
1/2 teaspoon onion granules
1/4 teaspoon garlic granules
1/2-1 teaspoon vegan Dijon mustard
1/2-1 teaspoon vegan Worcestershire sauce
good pinch cayenne pepper
salt, to taste

What you do:

1. Melt margarine in medium saucepan. Add flour and stir well with wooden spoon over medium heat. Watch for burning! Do cook the flour for at least a minute until the mix looks frothy and bubbly. Remove from heat.
2. Stir in milk, stirring all the time and keep stirring off the heat until all the liquid has been incorporated into the mixture and there are no lumps. Return to low heat and stir until thickened.
3. Add in nutritional yeast and remaining ingredients and stir until smooth. Taste for seasoning. Serve hot over veggies, on English muffins, for mac and cheese, grilled cheese sandwiches... out of the pot with a spoon...

SO HOW'D IT GO?

Hey, this recipe sounds awesome!
Does anyone know how long it can keep in the fridge? Or how to store it for a long time?
Thanks!

;D WooHoo!!! This sauce is the most fantastic thing ever! I've made it at least a dozen times...I too use fresh garlic and whole grain mustard...but I've also kept the tahini (2Tbs) in there. I usually eat it with pasta. I actually lost track of this recipe b/c I forgot to add it to the 'ol recipe box...my sister was laughing at me for being so upset...then I re-found the recipe and made the sauce for her. Needless to say, she was very apologetic after tasting the sauce!
Thank you for an awesome recipe!

Delicious! I made a few modifications - fresh garlic instead of garlic and onion granules, wholegrain mustard rather than dijon, chilli powder instead of cayenne, and I didn't have any tahini so used extra lemon - it was lovely :D Was after  grilled cheese sanwich equivalent and this was great just to spread on top of my fresh baked bread.
