Taco Casserole

What you need: 

1/2 package of Boca Burger meat substitute
1 package taco seasoning (check ingredients)
water
1 15-oz can corn
1 small can tomato sauce
totilla chips
1 15-oz can of beans (refried or black)
1/2 onion diced
non-stick cooking spray
2 cups grated soy cheese

What you do: 

Spray pan with non stick spray. Warm the meat substitute a few minutes. Put in onion and taco seasoning, using the amount of water called for on the taco seasoning package. Cook for a few minutes, add tomato sauce and corn. Cook a few more minutes.
Put chips on bottom of a deep 9 inch casserole dish (crunched a little bit, not too small). Pour mixture over chips, then cheese, then more chips, mixture, cheese. The mixture should be the last layer on the casserole. Then put a layer of beans and more cheese.
Bake at 350 degrees for 15-20 minutes until hot. Very yummy!

SO HOW'D IT GO?

This was pretty amazing. I followed directions almost all the way. I used a pack of veggie crumble type things I had and made my own seasoning for it, sauteed onions and garlic, then mixed it all in. I used corn tortillas as layers instead of chips also.

I just made this and it turned out great. In order to add nutrition I only put chips on the bottom layer and used raw spinach instead of chips in the other layer. I also made some rice with onions and roasted tomatoes to serve this over so we didn't fill up on chips. Thanks for a great recipe!

Made this last night and it was FANTASTIC. My hubby just kept on about how much he was enjoying this! I added jaleponos and some cayenne pepper for a little heat. This is such a fast meal, perfect for any weeknight!

So, I had to make lunch for my work. I had a challenge on my hands. My boss won't go near tofu and one of my co-worker can't eat onions. Most of my co-workers get scared when they hear the word 'vegan'. I decided to give your recipe a try---who doesn't love Mexican food?! I omitted the onion and added lots of garlic, used soyrizo, and added a layer of Spanish rice. Let me tell you that EVERYONE loved it and I ended up with no left-overs. Thank you for sharing this with us!

Kudos to the creator of this recipe.  I don't know if I was just really hungry - or if this was really good, but I ate 1/2 the dish all by myself.  Of course I made it in a smaller casserole dish.  But still, I ate half.  I ususally share whatever I'm eating with my dog, but he gets none of this and he seems to be slightly disappointed.  Too bad, the dish is just too good.  Thanks. :)>>>

So I am just taking this out of the oven right now and I made just one change in that I used multigrain tortilla chips to add some healthy to this dish.  It is so yummy and was so fast to make, and had everything needed right in my pantry(who am i kidding I live in a 600 sq foot apartment, there is no pantry, but I have a cupboard!!) I topped this with homemade guacamole, tofutti sour cream, jalepenos, and tomatoes, all resting on a bed of lettuce!!! Super good..... ;)b

This was so awesome.  I added a little cayenne for some heat & mixed the beans in with the "meat" & onion mixture.  It was basically like a nacho casserole.  I'll definitely make this one again.

So good! I didnt have taco seasoning but I had chili mix....i dont really know what the difference is if there even is one but I used that instead. Very Yummy. :D
