Tabouli

What you need: 

1 cup boiling water
1 cup bulgar wheat
1 cup fresh parsley, minced
1/2 cup mint leaves, minced
1/2 cup onion, finely chopped
1-3 tomatoes, diced
2 cucumbers, seeded and diced
3 tablespoons olive oil
3 tablespoons lemon juice
1 teaspoon salt

What you do: 

1. In a large bowl, pour the boiling water over the bulgar wheat. Cover and let sit for 20 minutes, until the wheat is tender and the water has been absorbed.
2. Combine all the other ingredients; mix well. Chill.
Serve with warm pita chips or crackers.
Source of recipe: This is a combination of about 10 different tabouli recipes.
