Tabouli

What you need: 

350g cracked wheat
125g chopped parsley
50g chopped mint
1 medium onion, finely chopped
2 medium tomatoes, chopped
4 tablespoons grapeseed oil
2 tablespoons lemon juice
black pepper

What you do: 

Soak cracked wheat in cold water for 45 minutes, then squeeze out as much water as possible. Mix together with herbs, tomato and onion. Mix oil and lemon juice together, pour over. Sprinkle with balck pepper.
This middle-eastern salad is delicious served with pita chips, hommous and vine leaves. Or use it in a sandwich with sliced tomatoes, rings of spanish onion and felafel.
