Szechwan-Style Baked Eggplant

What you need: 

1 or 2 Japanese eggplants, julienned
3 cloves garlic, minced
1 jalapeno, sliced or 1 or 2 teaspoons red pepper flakes
soy sauce, to taste
1/2 to 1 tablespoon brown sugar

What you do: 

1. Preheat broiler. Place julienned eggplant in a baking dish. Add garlic and jalapeno and mix to coat eggplant.
2. In a separate bowl, mix a small bowl of soy sauce with vegan brown sugar. Make sure there is enough soy sauce to soak the eggplant in.
3. Pour the vegan brown sugar-soy sauce mixture over the eggplant. Broil eggplant for about 20 minutes, or until brown.
If you have more time, you can marinade the eggplant before broiling. I usually don't have time to prepare in advance and it turns out fine.

SO HOW'D IT GO?

This was really yummy and easy--cutting the eggplants was the only time-consuming part.  I added in some onions and was very liberal with the garlic! I will definitely make this again, and next time I will serve it over brown rice.
