Spectacular Spectacular!! Thin Mint Cookie

Ingredients (use vegan versions):

    cookie:
    18.25 oz box of fudge cake mix (check ingredients)
    3 Tablespoons veg shortening melted
    1/2 cup cake flour, measured then sifted well
    3 Tablespoons water
    non stick cooking spray
    1 egg worth of prepared Ener-G Egg Replacer
    coating:
    6 Tablespoons shortening
    36 oz of your favorite vegan chocolate
    3/4 teaspoon peppermint extract

Directions:

Combine all cookie ingredients in a bowl except water...add water a little at a time to make a dough.  Chill 2 hours in fridge. Heat oven 350.   Roll out dough on floured surface until thin about 1/8-1/16 inch.  Cut in desired shape (the smaller the better tasting). A shot glass works well.  Spray cookie sheet with cooking spray.  Bake cookies 10 minutes.   Remove and let cool COMPLETELY!!

Fudge coating:  Combine chocolate (already broken up) with peppermint and shortening in a microwave safe GLASS bowl (plastic makes it taste funny).  Heat on medium power for 2 minutes.  Stir.  Heat one more minute on medium.  Stir and continue with short heating until smooth.

Dip the cookies one at a time with a long prong fork, or wide slotted spoon...this is messy so be careful.  Lay the coated cookies on wax paper covered cookie sheet.  refrigerate until firm.   ENJOY THE SPECTACULAR SPECTACULAR!!!  and share the wealth!

Serves: 100 cookies

Preparation time: 20-30 minutes

I subsituted banana for the egg/egg replacer, which gave an interesting twist to the flavor but worked beautifully. Thanks for the recipe Smiley

These are some kick-butt cookies!!  They were a little labor-intensive for my limited cooking/baking abilities but TOTALLY worth it!  For the chocolate i used 3 bags of semi-sweet choc. chips, which was a pretty good deal as opposed to buying solid or baking chocolate.  Thank you for this great recipe!!!

Youre right...I'm actually a fan of the USGS, so I shouldn't have gotten that confused.  Its actualy either GSUS or GSUSA...or something.  The point is, they're supposed to be eaten frozen. Smiley

I used coconut oil instead of shortening since I don't/won't have any in the house.  It works just fine.  The cookies may have taken only 20-30 minutes to make, but it took me the rest of the day to dip them all. . .I won't be making them again for a long time!  Maybe not till Christmas!  I got more than 100 cookies.  They are very, very good!  I will be proud to say that I made them.  I am serving them for a ladies tea party this Sunday.

These sound so good! I can't find Energy Egg Replacer anywhere, including health food stores. Anyone know where I could find it or an appropriate substitute for it? I have all the other ingriedients and  am hoping to make these today or tomorrow. Thanks.

These turned out great! Some slight changes: As I couldnt find egg replacer, I used applesauce-I needed 1/2 cup. I also needed 4 Tbs. of shortening, in order to make the dough wet enough. After refrigerating, instead of rolling out the dough I rolled the dough into little balls (smaller than a golf ball) than flattened them into thin rounds with my hand. Did everything else exactly as the recipe states, and my kids both loved them. I will definitely make another batch before xmas. Thanks for the hint about the applesauce.

These cookies are SO great.  I don't even like chocolate that much and I love them!  I made them for my husband and his parents (NOT vegan), and they went nuts over them.  One thing I did differently was I rolled the dough into a few logs and then cut thin slices to make little round cookies, instead of rolling the dough out flat and cutting circles.  for me it was easier that way.
