Sweet and Spicy Salsa

What you need: 

2 cups diced fresh pineapple
1/2 cup chopped fresh cilantro
1/4-1/2 cup chopped onion (red or white)
juice of 1 lime (zest optional)
1 tablespoon extra virgin olive oil
1 1/2 teaspoons sea salt
diced peppers (habanero, serrano, jalapeno) to taste

What you do: 

Toss all ingredients together, adjusting seasoning to taste. Chill until ready to serve. Best to make this 1/2 hour ahead of time to allow flavors to mingle.
This is great served as a topper for burritos or nachos or served alone with tortilla chips.
NOTE: For super spicy salsa, I like a combination of 2 serranos and 2 habaneros. If you like things milder, try 1-2 jalapenos or serranos.
