Super Stuffed Potato Skins!

What you need: 

2 red skinned potatoes (about the size of a fist)
2 tablespoons olive oil
1/2 teaspoon salt
2 tablespoons nutritional yeast
1 teaspoon mustard
1 teaspoon sriracha
1/4 cup onion, chopped
16 smoked almonds, divided (or just use vegan bacon bits)
3 slices vegan cheese, rolled up and shredded (I like to use Tofutti 2 yellow and 1 white)
2 green onions, sliced into rings

What you do: 

1. Poke holes all over the potatoes and microwave for about 5 minutes, or until they are done. Let them cool slightly. Slice in 1/2 along the long axis and scoop out the flesh, leaving about 1/4" potato attached to the skin. Preheat oven to 400 degrees F.
2. Take the scooped out potato flesh and mix it with the oil, salt, nutritional yeast, mustard and sriracha. It should be a lovely shade of orange (like cheese!). After it is mixed uniformly, mix in the chopped onions. Place 4 smoke flavored almonds in the bottom of each potato skin.
3. Place a few shreds cheese on top of the almonds in each potato skin. Top that with your mixed up orange potato/onion filling. Using your fingers, gently smooth the filling on top so it is rounded and not falling of the sides.
4. Place the remaining shredded cheese on top of the potato/onion filling. Bake in an oven or toaster oven for about 15 minutes, or until the cheese on top has melted and started to turn brown just a little.
5. You can help it out if you are impatient by using the broiler for the last few minutes. Place super stuffed potato skins on a plate and top with green onions.
Serve with vegan sour cream or eat as is! Enjoy!

SO HOW'D IT GO?

these were good.  i used the bacon bits, used a splash of water instead of the oil, a few shakes of onion powder in place of the chopped onions, and teese hard cheddar.  i wish i would've had some tofu sour cream made up because i think that would have really made them great.  i had them over a big bed of baby spinach & it was a really filling lunch.

*after i cut them in half while they were still hot, i tried to scoop out the middle of one half and it totally broke apart.  i let the 2nd half cool for a bit and it was much easier to scoop out & didnt break apart at all.  definitely follow the cooling step & it probably helps them to cool faster if you cut them in half while still hot.

It was hard for me to scoop out the potato because the potatos fell apart.... so i just mashed it all up and baked it. The taste of the nutritional yeast was too strong for me, but that might be because I made the recipe wrong.

These super stuffed potato skins were definetly super awesome potato skins! My carnivorous boyfriend absolutely went crazy for them and freaked out when i told him they were vegan! The neightbor downstairs even liked them haha. I added a touch more hot sauce and a bunch more mustard just to jazz it up a bit more and definetly used baco bits as well. Phenomenal thank you so much!!!

I followed the recipe exactly, using bacon bits at the bottom of the skins. They are sooo GOOD!! Hubby says he would like them better minus the chopped onion in the mix, I love onions, but I agree. I was a little wary of the teaspoon of sriracha, since a little goes a long ways, but I think I would actually add more next time. I'll be making these often! Awesome bar food btw!!  ;)b

These turned out fantastic! My boyfriend LOVED them!!! I made some changes, but I cannot recall what they were at this moment. We served these with salad for a complete meal. Thank you for the recipe, great job :)

Made this for dinner tonight -- absolutely amazing!  Being a fairly new vegetarian, it was my first recipe with nutritional yeast, and I was deliciously surprised!  I used regular hot sauce since it's what I had in the house, and skipped the almonds/bacon bits.  I also added a bit of chipotle and cumin to the mixture before stuffing the potatoes.  I love it, but could definitely only eat one potato as a full meal.  Thanks for such a yummy contribution, this is staying in my recipe box for sure!

Yay!  I didn't realize we could review this now!  These are absolutely amazing!  They were a big hit with everyone, we'll definitely be making these again.  I also used the bacon bits instead of almonds, and served with tofutti sour cream.  Soooo good.  Thanks!  Mine didn't look anywhere near as pretty as the other pics, so I'm not posting mine.  Thanks soooooooooooo much!!!

This was freaking amazing! 
I had never made potato skins before - but I sure used to eat the hell outta them before going vegan....I'm so happy you posted this - and added the beautiful pictures!
I followed the recipe to a T - adding bacon bits instead of almonds
We dipped them in Tofutti Sour Cream mixed with salsa.....fantastic!
Its been our Friday night fun-food!
