Super Moist Chocolate Cake

What you need: 

1 1/2 cups all-purpose flour (can substitute with whole wheat flour)
1 cup white or brown sugar
3 tablespoons sifted good quality cocoa
1 teaspoon baking soda
1/2 teaspoon salt, optional
5 tablespoons canola oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water

What you do: 

1. Preheat oven to 350 degrees F. In a bowl, combine flour, sugar, cocoa, baking soda, and salt; mix well. Make three deep holes in the dry mixture. Into one hole, pour the oil, into the next hole, pour the vinegar, and into the final hole, pour the vanilla.
2. Pour the water into the bowl, over all. Mix the wet and dry ingredients together until there aren't any more lumps and pour into an ungreased 9x9 baking pan, 2 inches deep.
3. Bake for about 30 minutes, test with a fork.
By far the most surprisingly deeelightful cake. This recipe is great for adults and for kids ages 3 and up. Enjoy this delicious cake. You will be surprised at its moistness and richness! It can be cooled and iced with your choice of icing or can be enjoyed on its own. The batter can also be used to make cupcakes!
For an instant cake, have the premeasured, premixed dry ingredients at hand, then simply add the wet ingredients when you want a fresh treat! It makes a great birthday cake! Hey, it even freezes well!

definitely a fantastic recipe. i just made it for the first time the other night so i followed the recipe exactly. it was perfect!

Hi again.  I made this recipe into chocolate cupcakes and strawberry cupcakes.  I mixed together the dry ingredients (minus the cocoa) and divided in half.  For the chocolate cupcakes I added half the cocoa and the rest of the ingredients (halved each one).  For the strawberry, I added 1 teaspoon strawberry flavoring and 6 mashed strawberries (I used frozen strawberries) instead of the cocoa.  I then halved the remaining ingredients.  This recipe makes 13 cupcakes.  Yum-mm

Delish!  All my coworkers loved it!  I love it when meat eaters drool over such good vegan recipes, it is the best way to open their eyes.  The only change I made was to add a little bit of applesauce.

No, I did not heat the frosting.  I have an electric mixer, and I beat it a good while.

yummy and easy :) just what I like heehee. thanks!! one more question, did you have to heat it at all? I know some recipes for icing/frosting require heating some of the ingredients over the stove. and I agree sometimes trial and error & personal taste is what makes a recipe.

Hi Janeyboo - The frosting was very simple. Powdered sugar, almond flavoring, soy milk and small amount of shortening.  I did not measure (gets me in trouble sometimes), and added enough liquid to make the frosting a little thicker than mayo consistancy.

This cake turned out great.  It makes a one-layer square cake, and I just cut it in half to make it two layers.  Next time I will double the recipe to make a full two-layer cake.  Thanks for the recipe!

;D my first vegan cake!!! I knew from the first time I tasted the batter that it was going to be amazing. it was perfect! I just wish I had found a decent frosting that either didnt turn out icky or wasnt chocolate (I dont do chocolate on chocolate & my veg margarine is bad for baking but I am a thriftnut and wont buy what I dont need ::) ...) I ended up mashing some bananas and mixing in cinnamon and using it as a spread.. luckily we ate the whole cake within 2 days so it was fine. great recipe, when I want choco cake I will return to this one for sure!!! I will also have to try the vanilla pudding idea for a vanilla cake mmmm

i am eating this right now and it is amazing. Someone asked how you could turn this into a vanilla cake instead, and that's exactly what i did. i substituted the cocoa with 1/3 cup of vanilla pudding mix. I have no idea if regular pudding mix is vegan, but some canadian stuff i found is. Pud 'n fun is what its called. It came out soooooooooooo good.
