Super Moist Chocolate Cake

What you need: 

1 1/2 cups all-purpose flour (can substitute with whole wheat flour)
1 cup white or brown sugar
3 tablespoons sifted good quality cocoa
1 teaspoon baking soda
1/2 teaspoon salt, optional
5 tablespoons canola oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water

What you do: 

1. Preheat oven to 350 degrees F. In a bowl, combine flour, sugar, cocoa, baking soda, and salt; mix well. Make three deep holes in the dry mixture. Into one hole, pour the oil, into the next hole, pour the vinegar, and into the final hole, pour the vanilla.
2. Pour the water into the bowl, over all. Mix the wet and dry ingredients together until there aren't any more lumps and pour into an ungreased 9x9 baking pan, 2 inches deep.
3. Bake for about 30 minutes, test with a fork.
By far the most surprisingly deeelightful cake. This recipe is great for adults and for kids ages 3 and up. Enjoy this delicious cake. You will be surprised at its moistness and richness! It can be cooled and iced with your choice of icing or can be enjoyed on its own. The batter can also be used to make cupcakes!
For an instant cake, have the premeasured, premixed dry ingredients at hand, then simply add the wet ingredients when you want a fresh treat! It makes a great birthday cake! Hey, it even freezes well!

SO HOW'D IT GO?

Tasty, reliable chocolate cake recipe!  I've made this many times with different frostings.  Tonight, I made it German chocolate cake style, with the Coconut Pecan Frosting recipe from this site.  I did make a couple modifications.  I used apple cider vinegar, rather than white vinegar, as that is what I have.  I increased the cocoa to 5 T to make it extra chocolaty.  I subbed 2 T applesauce for 2 T of the oil.  Great basic chocolate cake recipe!

I baked this for my partner's birthday- I added chocolate chips and frosted it with a peanut/soy nut butter creation. a peanut butter cup cake! everyone who tasted it commented on how moist it was, and tasty! thanks for the recipe!

This is a wonderful chocolate cake recipe!  I doubled the ingredients to make 18 large cupcakes.  Baked them at 350 for 18 minutes and they came out perfect.

This was okay, but it didn't have enough flavor. Next time I will add chocolate chips and maybe something else too.

This is awesome it is my hands down, reliable supremely awesome cake I bring to parties. Everyone loves it.
I did tweek it a bit though after a few attempts at perfection.... I increased the cocoa to 4-5 tablespoons(yum!), and the baking soda to 2 tsp, I only have apple cider vinegar so I used that... then I added 1 tablespoon ground flax and mixed 1 tsp (equivelent to 1 egg) ener-g egg replacer into the 1 cup water. ( I know this sounds involved but sometimes with out the flax and ener-g it falls apart!)

It still stick sometimes no matter how well I oil the pan. I think my oven is too small and the pan is too close to the heat source.... but no one complains after I put the frosting on.

Hi again.  I made this recipe into chocolate cupcakes and strawberry cupcakes.  I mixed together the dry ingredients (minus the cocoa) and divided in half.  For the chocolate cupcakes I added half the cocoa and the rest of the ingredients (halved each one).  For the strawberry, I added 1 teaspoon strawberry flavoring and 6 mashed strawberries (I used frozen strawberries) instead of the cocoa.  I then halved the remaining ingredients.  This recipe makes 13 cupcakes.  Yum-mm

Delish!  All my coworkers loved it!  I love it when meat eaters drool over such good vegan recipes, it is the best way to open their eyes.  The only change I made was to add a little bit of applesauce.

No, I did not heat the frosting.  I have an electric mixer, and I beat it a good while.
