Super Moist Chocolate Cake

What you need: 

1 1/2 cups all-purpose flour (can substitute with whole wheat flour)
1 cup white or brown sugar
3 tablespoons sifted good quality cocoa
1 teaspoon baking soda
1/2 teaspoon salt, optional
5 tablespoons canola oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water

What you do: 

1. Preheat oven to 350 degrees F. In a bowl, combine flour, sugar, cocoa, baking soda, and salt; mix well. Make three deep holes in the dry mixture. Into one hole, pour the oil, into the next hole, pour the vinegar, and into the final hole, pour the vanilla.
2. Pour the water into the bowl, over all. Mix the wet and dry ingredients together until there aren't any more lumps and pour into an ungreased 9x9 baking pan, 2 inches deep.
3. Bake for about 30 minutes, test with a fork.
By far the most surprisingly deeelightful cake. This recipe is great for adults and for kids ages 3 and up. Enjoy this delicious cake. You will be surprised at its moistness and richness! It can be cooled and iced with your choice of icing or can be enjoyed on its own. The batter can also be used to make cupcakes!
For an instant cake, have the premeasured, premixed dry ingredients at hand, then simply add the wet ingredients when you want a fresh treat! It makes a great birthday cake! Hey, it even freezes well!

I made this for that special someone.

 

I was so moist and perfect :D. I took a suggestion from the other comments and used 5 tbsp cocoa powder and it was delicious. I also topped it with a lemon glaze and a vanilla/lemon icing

easy and perfect!! This recipe came highly recommended & I can see why... I improved only a little: 5 TBS of cocoa, 2 TBS applesauce + 3 TBS canola, and I greased the pan with coconut oil for a smooth exit... came out moist and delicious, and most importantly, met the approval of my 8 year old daughter, whose birthday is coming up soon. Am sure this cake will be a hit at the party... Thanks!!!!

Sounds delicious! It sounds like a perfect way to sneak vegan cake into some unsuspecting non-vegan. Then I can say, Ha-ha! You just ate delicious vegan cake and you liked it! :)

This is a great recipe! I took some suggestions from others and I added two extra tablespoons of cocoa powder and threw in some vegan chocolate chips. I also substituted the oil with 1/3 cup of applesauce. In order to make sure the cake wouldn't stick to the pan I put a piece of parchment paper on the bottom and the cake comes out like a dream! This is such a great recipe that it doesn't require icing. I just sprinkle the whole thing with powdered sugar. It's beautiful and it tastes great.

Wow, this cake is heavenly. After stirring up the batter, I was skeptical, thinking it would come out gooey. Not at all! It's fluffy, light, and moist. I added German chocolate frosting on top. My only recommendation would be more cocoa powder. I'm glad I tried this great recipe. Thanks.

I TRIED THIS LAST NIGHT AND IT WOULD HAVE TAKEN A LAW TO WREST THIS THING FROM THE BAKING PAN.  WHAT WENT WRONG?? FOLLOWED THE RECIPE AS WRITTEN.

this was the bomb. i made a very thin version in a sheet cake pan and then cut it in half and layered it. that made a cute little double-layer personal cake. i frosted it with a vanilla buttercream glaze. adorable!

GREAT cake recipe!!  ;)b  It was my mother-in-law's 62nd birthday!  She has always been soooooooo stinkin' skeptical and bothered about the vegan and vegetarian diet, especially because that's how I'm raising her grandkids  ::) .  So I made her a VEGAN chocolate cake...well, the icing had whey in it, but I eat and feed the kids vegetarian anyways.  She LOVED it!!!  HA!  Thank you for sharing!
