Super-Healthy Vegan Pancakes

What you need: 

3/4 cup spelt flour
1/4 cup soy flour
1 heaping tablespoon flax seed meal
1/2 teaspoon baking soda
1/8 teaspoon sea salt
1 cup (or more if you like thinner pancakes) unsweetened soy milk
1 heaping tablespoon unsweetened apple butter
1 teaspoon cooking oil of choice
1/2 cup of berries or chopped fruit (optional)

What you do: 

These are tasty eggless, wheatless, dairyless, refined vegan sugarless (until you add the syrup), high-protein pancakes!
Mix together all dry ingredients. Add all wet ingredients and mix just until blended. Spray a heated pan with cooking oil of choice, or use non-stick pan. Spoon batter onto pan (either one large pancake or four silver dollar pancakes). Flip pancakes when bubbles start to burst on the surface. Brown on both sides. (These pancakes need to be cooked well or they are mushy inside.) Serve with maple syrup or other topping of your choice!
