Super Carrots

What you need: 

5-6 carrots, peeled and cut to sticks
1/2 cup veggie stock
juice of 1/2 lemon
fresh parsley, coarsely chopped, to taste
2-3 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon garlic powder
sea salt and cracked black pepper, to taste

What you do: 

1. Start simmering the carrots in the veggie broth. Squeeze the lemon over the carrots and give them a toss.
2. Add parsley and garlic. Add spices, then toss everything again.
3. Keep everything simmering for a minute or two, then cover the pot and let everything steam together for another few minutes.

SO HOW'D IT GO?

Yum! I thought this was really tasty! I didnt have any parsley so i just used some herbs de province instead and an extra garlie. YUM!

These were pretty good, but not as flavorful as I'd expected with these ingredients.  I think I am going to make a raw version with shredded carrots, crushed garlic, fresh julienned basil and lemon juice.
