Sunshine Salad

What you need: 

1 cup brown rice
1/2 orange pepper, diced
small bunch of parsley, chopped
1 Tablespoon extra virgin olive oil
1 Tablespoon rice vinegar
1/4 cup orange juice

What you do: 

Mix all the ingredients together and let mingle for a few hours in the fridge.
Serve cold but with a smile. :)
