Sunshine Cake

What you need: 

3 limes
1 1/2 cups whole grain pastry flour
1 cup sugar or Stevia for baking
1 teaspoon baking soda
1 tablespoon vegetable oil
5 tablespoons applesauce
1 teaspoon vinegar
1 teaspoon vanilla
water
1 small package fresh blueberries
1 small package fresh raspberries

What you do: 

Preheat oven to 350 degrees Fahrenheit.
In a medium size bowl, combine sugar, flour, and baking soda. Stir very well.
Grate the lime zest over a large liquid measuring cup. Juice the limes into the measuring cup, watching out for seeds. Fill with water to make 1 cup.
Add the liquid mixture to the flour and stir well. It will foam up.
Then add the oil and stir. [br] Then the applesauce... [br] Then the vinegar[br] Then the vanilla[br] Then gently stir in the berries.
Pour into a square 8x8 cake pan that has been lightly greased and dusted with whole grain flour.
Bake at 350 for about 25 minutes, or until a knife inserted in the center comes out clean.
You can play around with the citrus juice and the berries to your liking. For example, replace the limes with one orange, or two limes and one lemon, or even cherry juice with fresh cherries stirred in.
Best served with tea. :)
