Sunny Pasta Salad

What you need: 

½ cup soy vegan mayonnaise
¼ cup very finely chopped red onion
3 tablespoon apricot preserves
juice of one lime
¼ teaspoon salt
¼ teaspoon pepper
8 oz. pasta shells, cooked, rinsed with cold water, and drained
11 oz. can mandarin orange slices, drained
2 cups seedless white grapes, washed, drained, and halved
½ cup coarsely chopped walnuts

What you do: 

In a large bowl, combine mayonnaise, onion, preserves, lime juice, salt, and pepper. Add shells, mandarin oranges, grapes, and walnuts. Toss to coat. Chill well before serving.
