Sun-Dried Tomato Pesto Pasta Salad

What you need: 

4 ounces sundried tomatoes in oil
4 ounces pine nuts
1 cup fresh basil
3 cloves garlic
1/2 cup olive oil
cooked pasta spirals, to serve

What you do: 

1. Combine all ingredients except pasta and blend for 3 minutes in blender. Meanwhile boil pasta until cooked.
2. Combine pasta with pesto ingredients. Serve hot or cold.

SO HOW'D IT GO?

This was pretty good, needed quiet a bit of salt for flavor though. Tasted the best cold after being in the fridge for a day- added fresh basil on top- a must!

I didn't process my sun-dried tomatoes...  I left them whole on top of whole wheat spaghetti covered with the pesto (I think it looks prettier this way).  I also used sunflower seeds instead of pine nuts since I didn't have any on hand.
