Sun-Dried Tomato and Hemp Heart Pesto
1/2 cup dried tomatoes
1/2 cup hemp hearts (shelled hemp seeds)
2 cloves garlic
1 1/2 tablespoon lemon juice
4 tablespoon or more extra virgin olive oil to taste
salt and ground pepper to taste
Soak the tomatoes in warm water until soft (about 20 minutes) and drain (save the liquid). Add all ingredients to a food processer and process until smooth. Drizzle in more olive oil if the mixture appears too dry or, to keep the recipe lower fat, add some of the sun-dried tomato water instead. Add more lemon juice if you like more tang.
