Summerrs Spanish Rice

What you need: 

1 cup uncooked white rice
3 tablespoons oil
1/4 to 1/2 cup onion, chopped
1 tomato, chopped
2 to 3 cloves garlic, crushed
1 (8 ounce) can tomato sauce
1 cup water
2 cubes vegetable bullion
salt and pepper, to taste

What you do: 

1. Heat oil and add rice, stir and allow rice to brown. When slightly brown, add garlic, onion and tomato and allow to cook for a few minutes, stirring constantly.
2. Add water, bullion cubes, salt, pepper and tomato sauce, stir and allow to cook on low covered for 20 to 25 minutes.
3. Turn off heat and allow to sit covered for 5 to 10 minutes before serving.

great quick recipe!!  Thanks for sharing!  Made a nice touch to our Mexican pie we made  :)

yummy!!!!
i added:
1 can corn
1 can kidney beans
instead of tomato i used a can of diced tomatoes w/ green chilies
-from these cans i used the juices to make up as the water
~1/2t cayenne
~1t chili powder

tastes SO GOOD!!!!

this was super tasty and very easy. great as a side dish with tofu enchilladas!
