Stuffed Brinjals

What you need: 

(yennai katrika in tamil/gutti vankai in telugu)

500 gms brinjals
5 onions
10 cloves garlic
10green chillies
1/2 cup coriander leaves
1/2 cup grated coconut (fresh or dried)
2 inch piece ginger
1 teaspoon sesame seeds
1 small lemon-sized tamarind ball
1 teaspoon garam masala
1/2 teaspoon turmeric
salt- to taste
1/2 cup oil
1/2 teaspoon mustard seeds

What you do: 

Wash and cut brinjals such that it splits into four with a common base. The stuffing will be filled in this.
For Stuffing:[br] Finely chop onions. Then grind into a smooth paste onions, garlic, green chillies, coriander leaves, grated coconut, ginger, sesame seeds, tamarind, garam masala, turmeric, salt.
Stuff the brinjals with this stuffing.
Then in a frying pan, heat the oil and add mustard seeds. Once mustard seeds crackle, add the stuffed brinjals and remainder of the stuffing, if any. Cook brinjals till soft.
You could also cook it in a pressure pan in the same way. This will help reducing some amount of oil for the calorie-conscious.
This delicious and spicy recipe is now ready to serve hot with rice, chapatis.
