Stir-Crazy Cake

What you need: 

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1/2 cup cocoa
2 teaspoons soda (bicarbonate)
1/2 teaspoon salt
2/3 cup vegetable oil
2 Tablespoons vinegar
1 Tablespoon vanilla
2 cups cold coffee (or water)
Topping: 1/4 cup sugar plus 1/2 teaspoon cinnamon

What you do: 

Preheat oven to 350 degrees F. Place flour, sugar, salt, cocoa and soda in 9 x 13 inch (rectangular) cake pan. Mix with fork. Form 3 wells in this mixture. Pour oil in one well, vinegar in another, and vanilla in the third well. Pour cold coffee (or water) over all and STIR with fork until well blended. DO NOT BEAT. Sprinkle cinnamon sugar over the top of the batter, and bake for 35-40 min.

SO HOW'D IT GO?

I made this on a cooking class night.
My students didn't believe you could make a cake taste good with only stirring it, so I challenged them to make two batches: one the way they were used to make cake and one the way the recipe told them too.
Both came out nicely, but the stirring-one was better!!!!!
