Stacie's Quick & Easy Vegetarian Chili

What you need: 

2 tablespoons olive oil
1 medium red onion, chopped
2 cloves garlic, minced
1 - 19 ounce can red kidney beans
1 - 14 ounce can diced tomatoes
1 - 14 ounce can tomato sauce
1 cup frozen corn
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon cayenne pepper
2 teaspoons salt
1 teaspoon pepper

What you do: 

1) In a skillet over medium heat, saute the onion with the olive oil until the onions are translucent, about 7 minutes. Add the garlic and saute another minute. Add the remaining ingredients, stirring to combine. Simmer for 20 to 30 minutes, adjusting spices to taste. Serve over brown or white rice.
Source of recipe: This recipe is a result of me scrounging in my cupboards for whatever I had to make for dinner since I hadn't gone grocery shopping in a couple weeks. All I had was canned and frozen food. But I'll be making this again even if I have fresh food on hand...it was sooo tasty!

SO HOW'D IT GO?

This was good! I added some crumbled, extra firm tofu and extra tomato to make it meatier and more volume. Quick & cheap!!!
