Squash Soufflé

What you need: 

1 pound frozen winter squash
1 (12 ounce) package silken tofu
1/2 cup packed brown sugar, divided
1/2 tablespoon nutmeg
1/4 cup wheat flour
1/4 cup pecans or walnuts
1/4 cup raisins
1/4 cup wheat germ

What you do: 

1. Preheat oven to 350 degrees F. Mix thawed squash, tofu, half of brown vegan sugar, nutmeg, and flour in blender until creamy.
2. Pour into a casserole dish. Mix rest of brown vegan sugar, nuts, raisins, and wheat germ in a bowl, and sprinkle on top of mixture.
3. Bake 45-60 minutes. Even my meat eating husband loves this!
