Spinach Stuffed Mushrooms

What you need: 

Seasoning:
1 1/3 cups nutritional yeast flakes
3 tablespoons onion powder
2 1/2 teaspoons garlic powder
1 tablespoon salt
1 teaspoon celery seed
2 1/2 tablespoons Italian seasoning
2 tablespoons parsley, dried Mushrooms:
24 large (but not huge) white mushrooms, stems removed and reserved
1/4 cup shallots or onion, chopped
2 large cloves garlic, chopped
2 tablespoons balsamic vinegar
1/4 cup water
2 teaspoons seasoning (recipe above)
1 (10 ounce) package frozen chopped spinach, thawed and drained

What you do: 

1. For seasoning, blend smooth all ingredients except parsley. Stir in parsley. Store in airtight container. Preheat oven to 400 degrees F. Lay out mushroom caps on nonstick jelly-roll pan.
2. Pop in oven for 5-10 minutes to dry out and cook slightly. Set caps aside. Chop the mushroom stems finely. Saute shallots, garlic, and balsamic vinegar in small saucepan.
3. When onions start to turn translucent, add mushroom stems, water, and seasoning. Cook a few minutes. Add spinach and cook until water is almost all absorbed/evaporated.
4. Mound the spinach mixture onto the the mushroom caps, pressing it into the caps. Lower oven heat to 300-350 degrees F and bake for 10-15 minutes until hot and mushroom caps are cooked.
If you leave them slightly undercooked, you can do these ahead and then heat them up in the microwave when needed.
Use this seasoning to make a quick stock out of water when you have no veggie stock on hand. Excellent for flavoring rice and as a soup base.
Make a very simple, easy, and good-tasting gravy by mixing 1 1/2 cups water, 1 tablespoon seasoning, and 2 teaspoons brown miso. Mix in some potato starch + water right before serving gravy to thicken Quick, easy, and surprisingly tasty.'

SO HOW'D IT GO?

Mushrooms are my fav. I live in shimla its known as mushroom city of india. Any one ever eat dafi mushrooms ? its used in Hidradenitis suppurativa cure and shin splints.

These were very good!  I actually took the leftover filling and mixed it with 2 cans chickpeas, juice of 1 lemon, olive oil, and a garlic clove to make scrumptious spinach hummus.  Its amazing! Thank you for the great recipe! I may have to add the hummus one since it is just so good!

I made these at the last minute for a huge family party we had this weekend and everyone who ate them really liked them a lot!
I could not find the nutritional yeast (I probably could have if I had more time to shop) so I just left it out, and sprinkled some cheese on top of the spinach after I stuffed the shrooms.
One of my uncles who doesn't even LIKE spinach liked these a lot and had several! My family is adjusting really well to my vegetarianism, and I'm going to keep proving to them that you DON'T need meat to make delicious food! Hehe

If you have a decent health-food shop nearby they should sell nut. yeast.

hmm, i know we have fresh yeast and dry yeast in finland. so are yeast flakes the same as dry yeast then, or as good as? yeah i will have to make my way to a health food shop and see if they do have yeast flakes. and it's from nuts you say? thank you for your help =)

NO!!!!!! don't ever eat fresh or dry yeast. Or "brewer's" yeast, for that matter. The lady at the health food store here gave me that the first time I went to buy it. Talk about disgusting. Ruined my lasagna.

Anyhow, maybe you could get it on the internet. It's called "pleasant tasting nutritional yeast flakes" on my container. I'm not crazy about it, tell the truth. The first time I used it, I got something like food poisoning (which I've gotten one other time ever) 5 or 6 hours later. Might not have been from that, but it sort of ruined my taste for it. I get nervous about using it now. But I did have it with some mashed potatoes again...and felt a little sick after, but definitely not as bad as the first time.

I hope you can find it to give it a try...I had to ask around a bit because I live in south Louisiana where nobody knows what a vegetarian is. They think it's a horse or a cow or something, here. :)

Hi I was just wondering if there is anything you can substitute the nutritional yeast flakes with? I'm from Finland but have lived in London for the last 3 years and am pretty sure it's an American thing... I've never heard of or seen nutritional yeast flakes anywhere... hmm! :-\

So I would be grateful if anybody out there knows what to use insteed. Thank you.

If you have a decent health-food shop nearby they should sell nut. yeast. It gives a cheesey, nutty taste to food and also has a good nutritional profile. I'm really not sure if there are any suitable replacements.. I live in Devon and found it, so I'm sure up there it would be no problem? Also, it's a good idea to ask where it is if they sell the stuff, because it can seem hard to find in the shop itself.. good luck!

These mushrooms may have been too small because I had half of the stuffing left over.

The spinach stuffed mushrooms have a very light flavor.  They would be refreshing during hot summer months. 

I'd prefer more flavor, so when I make them the next time, I'm going to add more of the excellent seasoning.  The nutritional yeast flakes give it depth. 

I see myself always having the seasoning on-hand for all sorts of dishes.  Even if you don't make the stuffed mushrooms, try the seasoning.  It's really good.  :P
