Spinach Mashed Potatoes

What you need: 

3 pounds potatoes, peeled and chopped
5 ounces spinach
1/2 cup vegan margarine (I used Earth Balance)
1 cup nondairy milk (I used hemp)
salt and pepper, to taste

What you do: 

1. Boil potatoes until soft enough to mash. Strain most of the liquid out, leaving about 1/2 cup in the pot. The potatoes should be steaming hot.
2. Add the spinach (it will start wilting right away), margarine, and milk. Salt and pepper, to taste.
3. Mash or blend to desired consistency. I used an immersion blender which makes them silky smooth.
Source of recipe: I made it up based on mashed potatoes I had at a restaurant.

how much is 5 oz. fresh spinach? A full bag? This looks interesting

I used a whole box of spinach from Whole Foods, it's a regular size plastic container that they sell their greens in.
