Spinach Linguini with Pepper and Mushroom Sauce
spinach linguini (enough for 2 people)
1 red pepper
1 green pepper
1 sm. box mushrooms
2 Tablespoons oil
1 medium jar spagetti sauce (I like Classico)
Wash and slice mushrooms. Cut peppers into 1/2 strips.
Heat oil in pan. Add mushrooms and peppers. Stir fry over medium heat until peppers are wilted. Pour sauce over all and heat through.
Put spagetti on plate and spoon sauce over it.
You can be very versitile with this recipe. I don't use garlic and onion because it doesn't agree with me, but I'm sure they would be delicious. Also you can make as much vegetables as you want and add a larger amount of sauce to make this for more people. Sometimes I saute chunks of tofu with the vegetables. You could also add a yellow pepper to make this very colorful. We love this dish and I hope you enjoy it too.
